Remember when we talked last week about toddlers and the dreaded v-word? Rhymes with “wedgies?” Yeaaaaa, so it really is a losing battle. Until THIS RECIPE by Damn Delicious! My son woofed down these Zucchini Tots one right after the next at lunch today.
I definitely have some kinks I need to work out, but her recipe was amazing. As a perfectionist, I considered waiting to post these babies until I got my down, but I wanted to share my notes with you instead. I can’t wait to make these again this week! I want to try a broccoli version too!

- Make sure you wring out as much water from the zucchini as possible. With 4 hungry tiny humans flocking for lunch, I rushed this part. While the tots were still amazing, I wish I had commited more to this important step. I need to invest in some cheesecloth for wringing out water from veggies. This is key to crisp tots and mine were ALMOST there…almost.
- Next time, I might add more shredded cheddar. It has nothing to do with the original Damn Delicious recipe, I just think I have a problem. Hi, my name is Victoria and I’m addicted to cheese.
- I used the matchstick carrots from the produce section of the grocery store that are prepped already. These carrot pieces were much thicker and longer than the finely shreded zucchini and it made the mixture hard to form into tots. Next time, I will shred these myself with my mini food processor.
- I think I might add some dill for seasoning instead of the ones listed. I have a thing for dill with carrots.
