Guys! I was SUPER excited when I discovered that Nordstrom posted their tomato soup and crostini recipe! My mom and I have a girls’ date at Nordstrom Cafe at Westfarms Mall about every other week, and although the entire menu sounds amazing, we keep coming back to our favorite soup. I always ask for extra crostini for dunking and since we are there so frequently (and Wyatt flirts with his “girlfriend” the host) she always hooks us up.
I’ve made my own versions of tomato soup for years, even moreso lately because it is one of Wyatt’s favorites, but there is just something about this recipe. The texture is perfect. The flavor is perfect. Everything about it is perfect! There are thousands of dupe recipes shared on Pinterest for restaurant favorites – Olive Garden Zuppa Toscana, Panera Broccoli Cheddar Soup, the list goes on. What were the odds that Nordstrom Cafe’s tomato soup recipe would be out there, and even better, shared by the ACTUAL Nordstrom Cafe chef team?
After reading the recipe I discovered the secret to the flavor and texture is the 5 carrots added to the soup. So not only do I get to recreate this perfectly at home, BUT I get to sneak veggies into my toddler? Just when I thought I couldn’t love Nordstrom anymore…
I did notice their posted recipe did not list any kind of garlic in the soup. I most definintely taste garlic in there, so I added about a tablespoon of minced garlic. Their chef team is very responsive to commenters on this recipe post, so I reached out to ask about garlic – what kind and how much. As soon as I hear back, I will update you all here!
